All 250 recipes have been photographed by Ignacio Urquiza, one of Mexico's foremost food and travel photographers. Susanna Palazuelos

Susanna Palazuelos is renowned Mexican chef who earned a distinguished reputation as Mexico's premier caterer. She has hosted parties around the world and at her estate in Acapulco, Casa Tres Fuentes. Palazuelos frequently attends culinary festivals in Mexico and abroad, sharing her vast knowledge of Mexican cooking, which includes traditional dishes as well as nouvelle cuisine. She was also named to the Circulo Mexicano de Arte Culinario, a group honoring the distinguished women chefs of Mexico.

Marilyn Tausend (1932-2018)

Marilyn Tausend's knowledge of the history and food traditions of Mexico came from her extensive travels there. As the former organizer of Culinary Adventures, Inc., she led culinary tours throughout Mexico, where participants studied the diverse regional cooking ingredients and techniques. Tausend lived near Seattle, Washington, where she wrote restaurant reviews and food and travel articles for newspapers and magazines.

Ignacio Urquiza

ignacio Urquiza is one of Mexico's leading food and travel photographers. His work has been published internationally, in cookbooks and in books about Mexican travel, art and architecture. He lives in Mexico City.
